Meatballs...I would eat them for breakfast! in any of their different versions. I came up with this idea when I found chorizo meatballs online, I thought: "mmm, with spinach to soften the strength of the chorizo...could be awesome." and guess what? They are! Easy to make, let's get ready.
INGREDIENTS
1lb Ground Beef
1 Chorizo
1 Handful of Spinach
1 Onion
3 Garlic Cloves
1 Egg
Flour
Salt
Black Peppper
3 Ts Olive Oil
4 Tomatoes
1/2 Red Pepper
1/2 Green Pepper
3 Carrots
1 Cup of White Wine
1 Cup of Water
1 Beef Broth Cube
STEP BY STEP
1. Chop the chorizo veeeeeeery small.
2. Minced the garlic.
3. Chop the onion.
4. In a bowl mix the beef with the spinach, garlic, onion and chorizo.
5. Add salt, pepper and the egg to the mix.
6. Knead well.
7. Make the meatballs and batter them with flour.
8. In a pan add olive oil and fry the meatballs a little bit until golden.
9. Cut the veggies in pieces and put them in a blender with the wine and the water.
10. Pour the sauce in a pot and heat it up.
11. Add the beef broth cube to the sauce once it starts boiling. Low the heat.
12. Add the meatballs to the pot.
13. Add parsley, mix, cover and cook for 30-40 minutes in low heat.
14. Serve and enjoy!
Did you notice the chorizo flavor in the sauce? Awesome right? If you want a full meal with this, cook some spaghetti or rice and it will match perfectly with the meatballs. Also, a good Rioja will go pretty good with them. Enjoy!

Albóndigas...podría tomarlas al desayuno, en cualquiera de sus versiones. Se me ocurrió esta idea cuando encontré albóndigas de chorizo online. Pensé: "mmm, con espinacas para suavizar la fuerza del chorizo...¡podría ser cojonudo!" Y...adivina qué...¡lo son! Muy fácil de preparar, vamos allá.
INGREDIENTES
1/2Kg de Carne Picada de Vacuno
1 Chorizo rojo
1 Puñado de espinacas
1 Cebolla
3 Dientes de Ajo
1 Huevo
Harina
Sal
Pimienta Negra
3 Cucharadas de Aceite de Oliva
4 Tomates
1/2 Pimiento Rojo
1/2 Pimiento Verde
3 Zanahorias
1 Vaso de Vino Blanco
1 Vaso de Agua
1 Pastilla de Caldo de Ternera
PASO A PASO
1. Trocea el chorizo muuuuuuuuuy pequeño.
2. Pica ajo muy fino.
3. Pica bien la cebolla.
4. En un bol mezcla la carne picada con el chorizo, la cebolla, el ajo y las espinacas.
5. Echa sal, pimienta y el huevo y mezcla bien.
6. Amasa todo bien.
7. Haz las albóndigas y rebózalas en harina.
8. En una sartén echa aceite y fríe las albóndigas hasta que estén doradas.
9. Trocea las verduras y ponlas en una licuadora o picadora con 1 vaso de vino y uno de agua.
10. Añade la salsa a una olla y ponla al fuego.
11. Echa la pastilla de caldo cuando empiece a hervir.
12. Añade las albóndigas a la olla.
13. Echa perejil, mezcla, cubre y deja cocinar unos 30-40 minutos.
14. Sirve y ¡Disftuta!
¿Habéia notado el sabor del chorizo en la salsa? ¿Cojonudo verdad? Si quieres el menú completo puedes acompañarlas de espaguetis o arroz y quedarán perfecto con las albóndigas. También un buen Rioja va bien con ellas. ¡Disfrútalas!
